It is an age old question…. “What’s for Dinner?’ With life moving so fast and only gaining momentum I often find this question to be one of the hardest ones I have to answer each day. So with work consuming so much of my time each day and the daunting task of finding time to squeeze in my school work as I continue to work towards my second degree I found that the question of what to have for dinner became filled with stress and anxiety. So I started to hatch a plan….. I would try to make freezer meals and have a list of pre planned dinners at the ready. No more “What’s for Dinner?” i would just check the list hanging on the fridge for what my options were. So far so good. It has been a lot of experimentation on what works and what doesn’t work, as well as some recipes that were just flat out fails. It happens. So I prepared approximately 20 different dishes over the course of a weekend, including the shopping and prep work. I made doubles of each dish so I had 40 meals shoved in my freezer. I think my estimated spending was around $250. Now, there are only two of us mind you. I am no longer feeding an entire army, what with us having 4 kids and various friends around. I would say we are half way through the list and rounding the corner to start the duplicates. I have only had one really BAD recipe that I am not sure what to do about its double. It was just not what I expected. Needless to say we had drive thru that night. On the weekends we are rarely home and so this has extended the time that these initial meals have lasted. I am thinking it is almost time to plan my round two. Hmmmmmm what can I make this time……

- Chicken Fried Steak, Mashed Potatoes Cream gravy, corn, Green Beans Biscuits.
- Shish~Ka~Bobs with rice
- Tamale Pie, Salad This was my one BIG FAIL. My fault. I used a sweet cornbread and it did NOT freeze well!!
- Beefy Noodle Bake, Corn, Broccoli, Salad, roll (Rob said this one upset his stomach. although it was tasty.)

- Ashley Springs Chicken, Twice Baked Potatoes
- Beans and Rice
- Pan Seared Pork Chops, Mashed Potatoes, Corn
- Teriyaki Chicken, Pineapple, Stirfry veggies, White Rice
- Tex Mex Chicken Bake, Corn Muffins, Salad
- BBQ Beef, Mac and Cheese, Cowboy Beans
- Buffalo Chicken Casserole, Twice Baked Potatoes, Corn, roll
- Mongolian Beef, Stir fried Green Beans, White Rice
- Bean and Cheese Burritos, Taco Salad
- Creamy Italian Chicken, Parmesan Risotto, Corn, Garlic Bread
